Valle d’Aosta

Valle d’Aosta is Italy’s smallest region. It is a mountainous, Northern region, with numerous valleys and rivers.

The region is a producer of meat and dairy products, which play an important role in its cuisine.

One of the region’s best-known products is Fontina cheese.

Rice, polenta, and potato gnocchi provide starch in the region’s diet, which contains barely a trace of pasta.
