Piemonte

The cuisine of Piemonte, in Northwestern Italy, is similar to that of its neighbor to the east, Lombardia. Rice is grown in Piemonte and risotto is popular. Nuts, mushrooms, truffles, and cardoons are all present for foraging. The region uses a lot of dairy products, and produces some cheese, such as its best-known, Castelmagno.
