Le Marche

The Marche is a region of central Italy, bordering Emilia-Romagna and the Republic of San Marino (an independent nation within Italy) to the north, the Adriatic Sea to the east, Abruzzo and Lazio to the south, Umbria to the west, and Tuscany to the north-west. The land is almost completely hilly, with the exception of river valleys and a narrow strip of coastline.

The cuisine of Marche consists largely of fish and shellfish along the coast, and wild and domesticated pigs and chickens inland. These are often stuffed and roasted.
