Roasted Fingerling Potatoes with Figs, Garlic & Thyme

Fingerling potatoes allow a certain amount of artistry. That long, slender shape, that golden yellow flesh. Figs are a luscious fruit; chewy, with a sweet, jelly-like filling. I saw this recipe in the NY Times and thought it was an interesting combination.

There are some nice textures in this dish. The chewy figs contrast nicely with the crisp potatoes.

Reconstituting the figs in hot tea is a clever way to add another flavor to this dish.fingerling1
